3 1/2 cups flour
1 1/2 cup milk or coconut milk
1 tsp lemon juice
3 tsp baking powder
1 1/2 tsp salt
1/2 cup olive oil
1 cup blueberries
Topping: 1/2 cup of brown sugar
1/3 cup flour
1/2 tsp cinnamon
1/4 cup shortening
*Note: Soaking your wheat before eating it breaks down the Phytic acid and better allows your body to digest it.*
Mix the flour, milk and lemon juice in a large bowl. Leave set on the counter overnight.
In the morning add the rest of the ingredients (except the topping and blueberries). It may seem a little hard to stir at first; just keep working it. Once it's all mixed in, gently fold in the blueberries. Pour into a greased 9x13 pan.
Mix the topping ingredients and sprinkle over batter. Bake at 350*F for 45 to 50 minutes.
You'll be surprised at how soft and moist this is. Enjoy!
